The rhizomes are used in seasoning and flavoring a number of southeast Asian prepared dishes. The pith is also cooked as a vegetable and used in curries. Herbaceous growth to 5-10 ft / 3 m. Has large, long, ornamental leaves with the characteristic ginger look. Not frost tolerant, but rhizomes can be saved and regrown in successive years. #4814
